King's Lynn catering students experienced a new style of cooking thanks to guest chefs from The Dabbling Duck. The Dabbling Duck is a pub/bed and breakfast in Great Massingham. Head chef Dale Smith has been in the catering industry for a number of years, working in some outstanding restaurants such as The White Horse in Brancaster. Last year Dale visited a number of street food festivals and decided to introduce a taste of the world to The Dabbling Duck. It was this street food collection that he brought to Novus restaurant, with courses inspired by Korean, Thai and Mexican flavours.

      

Level 2 catering student Jack Reynolds said: “I really enjoyed working with Dale and the team. I was able to learn some new preparation and cutting methods as well as try out new flavour combinations. These chefs are true professionals who work in a different environment and use different techniques so it was great to experience some of that. To have them come to the college and work with us was a great opportunity.”
