Last week, fourteen Year 10 food technology students from Springwood High School visited the College of West Anglia (CWA) King’s Lynn campus for a taster day working in the catering and hospitality department. The event gave the learners a taste of what it is like to study at CWA and provided experience in working in a commercial kitchen to inspire future career options.

The Springwood students prepared and cooked a set menu which included pan fried seabass, smoked mackerel pate and a lemon and ginger posset with shortbread. Each of the learners had the opportunity to prepare the ingredients ready for the evening’s dinner service, including portion control to ensure consistent servings, safe knife handling and producing garnishes to complete the dishes.

The taster day concluded with the Springwood students serving the food they had spent the afternoon preparing for parents and springwood school staff in the CWA Novus restaurant. The learners helped set up the tables in the restaurant ready for the evening’s guests, ensuring cutlery and glasses were placed on each table correctly. Once dinner service began, each of the learners were responsible to plate up and serve each of the dishes for their own guests in the restaurant.
