Course basket

Customers of the Novus Restaurant at the College of West Anglia were recently treated to a 9-course ‘tasting menu’, inspired by Ukrainian dishes.

 

Level 2 Professional Cookery students produced the food, which included Skumbriya Deruni (cured mackerel, dill caviar and potato cake), Kovbasa (Ukrainian sausage served with pickled pear) and Medivnyk (steamed honey sponge, orange curd with sour cream), served by hospitality students to a full restaurant at the King’s Lynn campus. The vegetarian menu included Kyiv (garlic stuffed zucchini flower with sauerkraut) and Hrechanyky (buckwheat cake, horseradish mash, pickled vegetables and stuffed cabbage).

 Adam Burns, tutor and creator of the menu for the fundraising evening said, “All the students worked hard throughout the day to prepare the dishes and really pulled together to ensure service went smoothly, as in any professional restaurant. They performed incredibly to deliver all 9-courses to standard, on time.”

 As well as providing a tasty meal, the students also organised a raffle. Programme Manager, Helen Sims, said, “Huge thanks to The Salon (CWA’s hair and beauty salon), Accent Fresh, Liquor & Loaded and Middleton Steak House for donating raffle prizes. We raised £746.87 on the night, in aid of the Disasters Emergency Committee (DEC) Ukraine Humanitarian Appeal.”
