Orange Tree Takeover at CWA
Eager catering students were given the chance to cook with one of the county’s top chefs on Tuesday 12 January 2016.
Philip Milner, award winning executive chef at the Orange Tree in Thornham, shared his knowledge and expertise by helping catering students to prepare a five course dinner service, in the Novus Restaurant, at our King’s Lynn Campus.
The Orange Tree is an award winning contemporary dining pub nestled on the North Norfolk coast. It has been awarded Norfolk Dining Pub of the Year for the past four years and has also picked up the prestigious Great British Seafood Pub of the Year title.
The guest chef evening is part of a series of themed evenings that take place at the Novus Restaurant throughout the academic year. Upcoming evenings include the Burn’s Night special at the end of January and a Superheroes evening in early spring.
Mr Milner, with the help of his co-worker Adam Baker and the Orange Tree’s CWA apprentice Dominic Scott, turned out a menu consisting of a range of intricate dishes. Diners were served up delights such as organic sea trout, basil sorbet with mango mousse and Jerusalem artichoke velouté, pickled wild mushrooms, shaved truffle and parmesan air.
Mr Milner said: “It was a great opportunity for me to work alongside Alex Harrison [catering lecturer at CWA] again, as we went through college together. I’d like to thank the students for all their efforts and Adam and Dominic for their help too.
“The evening was a great success and I am chuffed with how everyone knuckled down to produce some really good food for the evening’s diners.”
Alex Harrison, lecturer in catering and hospitality at the college said: “It was fantastic for our students to be able to cook alongside Phil and Adam and we thank them for giving up their time to come in to the college.
“The restaurant was fully booked and the food looked incredible. It is experiences such as this that really enthuse our students and we hope that everyone gained a great deal of knowledge and expertise from the evening.”
